Chef Chris O’Brien

Chris Started his training as a teenager in Ballymaloe House under the watchful eyes of the late Myrtle Allen.

He spent 8 years here working in Ballymaloe gaining a life long respect for good food. He joined the team in the summer of 1992 for a summer job having no idea what he wanted to do with his life. At the end of the that Summer he realised he could cook and was asked by Mrs Allen to stay on Full time.

During winter time and a quieter time in Ballymaloe he was sent to work in Michelin star restaurants throughout Europe which was a major eye opener gaining invaluable experience. The likes of Hambilton Hall in the east midlands of England, Auberge de Hoefslag in the Netherlands, Drones restaurant in London and Martins of Edinburgh.

Later heading to San Francisco and Sydney Australia for longer spells working in high end restaurants.

Now 29 years of culinary experience later he has set up Table 8 Bistro.

Chris’s is renowned for his modern irish cooking and the daily menus show case the best of local produce where possible.

He set Up Table 8 Restaurant in 2001 in Cork City and its here he has branded Table 8 being a franchise locatable and replicatable in any venue.
